  • 400g kunafa (kataifi) pastry, shredded
  • 150g unsalted butter, melted
  • 300g mozzarella cheese (or akkawi cheese), shredded

  • 1/2 cup water
  • 1 tsp lemon juice
  • 1 tsp rose water or orange blossom water (optional)

For Garnish

  • 1/4 cup crushed pistachios

Instructions

1. Prepare the Syrup

  • In a saucepan, combine sugar and water.
  • Bring to a boil, then add lemon juice.
  • Simmer for 5–7 minutes until slightly thick.
  • Add rose water or orange blossom water and let it cool.

2. Prepare the Kunafa Dough

  • Place shredded kunafa pastry in a bowl.
  • Pour melted butter over it and mix well to coat evenly.

3. Assemble the Kunafa

  • Grease a baking dish or pan.
  • Press half of the kunafa mixture into the bottom.
  • Add an even layer of cheese.
  • Cover with the remaining kunafa and press gently.

4. Bake

  • Bake in a preheated oven at 180°C (350°F) for 25–30 minutes until golden and crispy.

5. Add Syrup & Garnish

  • Pour cooled sugar syrup over hot kunafa immediately after baking.
  • Sprinkle crushed pistachios on top.

6. Serve

  • Slice and serve warm for that signature stretchy cheese texture.
