  • 500g lamb (or beef/chicken), cut into pieces

  • 1 tsp ground coriander
  • 1/2 tsp black pepper
  • Salt to taste
  • 3 cups water or broth

For the Topping

  • 1 large carrot, julienned
  • 1/3 cup raisins
  • 2 tbsp sugar
  • 2 tbsp oil
  • 1/4 cup slivered almonds (optional)

Instructions

1. Prepare the Rice

  • Rinse basmati rice until water runs clear.
  • Soak for 20 minutes, then drain.

2. Cook the Meat

  • Heat oil in a large pot. Add sliced onions and sauté until golden brown.
  • Add garlic and cook for 1 minute.
  • Add lamb, salt, cumin, coriander, and pepper.
  • Cook until meat is browned.
  • Add water/broth, cover, and simmer for 30–40 minutes until tender.

3. Cook the Rice

  • Remove meat and strain the broth.
  • Boil the broth and add soaked rice.

  • Heat oil in a pan.
  • Add carrots and sauté for 2–3 minutes.
  • Add raisins and sugar, cook until slightly caramelized.

5. Assemble & Steam (Dum)

  • Layer rice and meat in the pot.
  • Add carrot-raisin topping on top.
  • Cover tightly and steam on low heat for 15–20 minutes.

6. Serve

  • Gently mix before serving or keep layers visible for presentation.
