Step 1: Prepare the proteins

  1. Wash and season your beef/chicken with salt, onion, and seasoning cubes.
  2. Add water and cook until soft.
  3. Add washed stockfish or dried fish if using.

Step 2: Blend the base

  1. Blend tomatoes, peppers, and onion until smooth.
  2. Set aside.

Step 3: Fry the egusi

  1. In a pot, heat palm oil on low heat.
  2. Add the ground egusi and stir continuously for 5–7 minutes until it forms a crumbly texture.
  3. Add the blended mixture and cook for 10 minutes.

Step 4: Add meat & broth

  1. Pour in the cooked meat with its broth.
  2. Add crayfish powder and stir well.
  3. Let it simmer for 10–12 minutes.

Step 5: Add vegetables

  1. Stir in the chopped spinach or ugu leaves.
  2. Cook for 3–4 minutes until the veggies soften.
  3. Adjust salt and seasoning.
