🥧 Tarta Pascualina Recipe (Argentinian Spinach & Egg Pie)

Tarta Pascualina is a traditional Argentine–Uruguayan savory pie made with spinach, ricotta, and whole eggs baked inside flaky pastry. It’s comforting, wholesome, and perfect for lunch, dinner, or meal prep.


Ingredients

For the Dough (or use store-bought pie crust)

  • 2 ½ cups all-purpose flour
  • ½ cup butter or oil
  • 1 tsp salt
  • ¾ cup warm water (as needed)

For the Filling

  • 500g spinach (fresh or frozen), chopped
  • 1 medium onion, finely diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 300g ricotta cheese
  • ½ cup grated parmesan
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp nutmeg
  • 5–6 whole eggs (4 inside, 1 for brushing)

Instructions

1. Prepare the Dough

  1. Mix flour and salt in a bowl.
  2. Add butter or oil and combine until crumbly.
  3. Add warm water gradually to form a soft dough.
  4. Divide into two balls, cover, and rest 20 minutes.

2. Make the Filling

  1. Sauté onion in olive oil until soft.
  2. Add garlic and cook 1 minute.
  3. Add spinach and cook until wilted (or until water evaporates if using frozen).
  4. Let cool slightly.
  5. Mix with ricotta, parmesan, salt, pepper, and nutmeg.

3. Assemble

  1. Roll out the first dough ball and place it in a greased pie tin.
  2. Add the spinach–ricotta filling.
  3. Make 3–4 small wells and carefully crack whole eggs into each well.
  4. Roll out the second dough ball and cover the pie.
  5. Seal edges and brush with beaten egg.

4. Bake

  • Bake at 190°C (375°F) for 35–45 minutes
  • Until the top is golden brown.

Serving Suggestions

  • Serve warm with a green salad.
  • Enjoy cold as a picnic dish.
  • Pair with chimichurri or a simple tomato salsa.
