🇰🇷 Tteokbokki (Spicy Korean Rice Cakes)

Make authentic Korean Tteokbokki at home — soft chewy rice cakes simmered in a spicy-sweet gochujang sauce. Perfect comfort food ready in 20 minutes!

📝 Ingredients:

  • 1 lb (450 g) Korean rice cakes (tteok)
  • 3 cups water or anchovy broth
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp gochugaru (Korean chili flakes, optional for extra spice)
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp minced garlic
  • 1 green onion, chopped
  • 1 boiled egg (optional)
  • 1/2 cup fish cake slices (optional)
  • 1 tsp sesame oil
  • Sesame seeds for garnish

👩‍🍳 Instructions:

  1. Soften the rice cakes
If using refrigerated or frozen tteok, soak them in warm water for 10–15 minutes until softened.

  2. Make the sauce
In a pan, mix gochujang, gochugaru, soy sauce, sugar, garlic, and water (or broth). Stir until combined.

  3. Simmer
Bring the sauce to a boil over medium heat. Add rice cakes and fish cakes (if using).

  4. Cook until thick
Stir continuously for 10–12 minutes until the sauce thickens and coats the rice cakes.

  5. Finish and serve
Add sesame oil, sprinkle sesame seeds and green onions. Serve hot with boiled eggs on top!

🥢 Serving Suggestions:

  • Serve as a street-food snack or with ramyeon noodles for a fuller meal.
  • Pair with Korean fried chicken, kimchi pancakes, or seaweed rolls (gimbap).
  • Great as a party snack or quick dinner.

🧊 Storage Tips:

  • Refrigerate: Keep leftovers in an airtight container for up to 2 days.
  • Reheat: Add a splash of water or broth and reheat on the stove until soft again.
  • Do not freeze — rice cakes become hard and lose texture when thawed.

FAQs About Tteokbokki

Q1. What does Tteokbokki taste like?
It’s spicy, slightly sweet, and umami-rich from gochujang — chewy and comforting.

Q2. Can I make it less spicy?
Yes! Use less gochujang and skip gochugaru. Add more sugar or a little ketchup for mild sweetness.

Q3. Can I make it vegetarian or vegan?
Definitely — just use vegetable broth instead of anchovy broth and skip the fish cakes.

Q4. What kind of rice cakes should I use?
Use cylinder-shaped Korean rice cakes (garae-tteok). You can find them in Asian grocery stores or online.

Q5. How can I make creamy Tteokbokki?
Add a little milk or cream cheese while simmering for a rich, creamy version called Rosé Tteokbokki.
