Egg Biryani, also known as Anda Biryani, is a delightful and protein-rich biryani made with perfectly boiled eggs, basmati rice, and a medley of whole spices. It’s a great alternative to chicken or mutton biryani, especially when you’re short on time but craving something aromatic and filling.

In this recipe, you'll learn how to make restaurant-style Egg Biryani at home in simple steps.


🍳 Ingredients

For the Rice:

  • 1½ cups basmati rice (soaked 30 minutes)
  • 1 bay leaf, 4 cloves, 2 cardamoms, 1 small cinnamon stick
  • Salt to taste

For the Masala:

  • 4 boiled eggs (shelled, slit or halved)
  • 2 tbsp oil + 1 tbsp ghee
  • 1 large onion, thinly sliced
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes, chopped
  • ¼ cup yogurt
  • 1 tsp red chili powder
  • ½ tsp turmeric
  • 1 tsp garam masala
  • Salt to taste
  • Chopped coriander & mint leaves

🍽️ Instructions

  1. Cook the Rice:
    In a large pot, boil 5 cups water with whole spices and salt. Add soaked basmati rice. Cook till 90% done. Drain and set aside.

  2. Prepare the Masala:
    In a pan, heat oil + ghee. Fry sliced onions until golden brown. Add ginger-garlic paste and sauté until raw smell disappears.

  3. Add Tomatoes & Spices:
    Mix in chopped tomatoes and cook till soft. Stir in yogurt, red chili powder, turmeric, garam masala, and salt. Cook till oil separates.

  4. Add Boiled Eggs:
    Gently add boiled eggs to the masala. Stir to coat well. Simmer for 3–4 minutes. Sprinkle chopped mint and coriander.

  5. Layer the Biryani:
    In a pot, layer half the rice, then the egg masala, then remaining rice. Add a spoon of ghee, a pinch of biryani masala (optional), mint, and fried onions.

  6. Dum Cook:
    Cover with a tight lid. Cook on very low heat for 10–15 minutes. Rest for 10 mins before serving.
