  • 4 cups warm vegetable or chicken broth
  • ½ cup grated Parmesan cheese

  1. Sauté Mushrooms
    Heat 1 tbsp olive oil in a large pan. Add mushrooms and cook until browned. Remove and set aside.

    In the same pan, add another tablespoon of oil. Sauté onion until translucent, then add garlic and cook for 30 seconds.

  3. Toast Rice
    Stir in Arborio rice and cook for 1–2 minutes until slightly translucent. Add white wine and let it absorb.

  4. Add Broth Gradually
    Add warm broth one ladle at a time, stirring constantly. Let the rice absorb the broth before adding more.

  5. Finish with Parmesan & Mushrooms
    Once rice is al dente and creamy (about 20 minutes), stir in sautéed mushrooms and Parmesan. Adjust salt and pepper.

  6. Serve
    Garnish with fresh parsley and serve hot.
