For Rice:

  • 1.5 cups basmati rice (washed and soaked 30 mins)
  • 3 cups water
  • 2 tbsp oil or ghee
  • 1 bay leaf
  • 4 cloves
  • 2 green cardamoms
  • 1 cinnamon stick
  • 1 large onion (thinly sliced)
  • Fresh coriander and mint leaves (optional)

Instructions

Step 1: Marinate Chicken

  • In a bowl, mix chicken with yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, and salt.
  • Cover and marinate for at least 30 minutes (or overnight for best flavor).

Step 2: Fry Onions and Spices

  • In a deep pot, heat oil or ghee. Add whole spices (bay leaf, cloves, cardamom, cinnamon).
  • Add sliced onions and fry until golden brown.

Step 3: Cook Chicken

  • Add marinated chicken and cook on medium heat for 10–15 minutes until the chicken is 70% cooked and oil starts to separate.

Step 4: Layer Rice

  • Drain soaked rice and layer it evenly over the chicken.
  • Pour 3 cups of water over the rice.
  • Add a pinch of salt. Cover and cook on low heat for 20–25 minutes.

Step 5: Garnish and Serve

  • Once done, fluff rice gently. Garnish with chopped coriander and mint.
  • Serve hot with raita or salad.
